Count place settings. A standard set includes a dinner knife, dinner fork, salad fork, soup or dinner spoon and teaspoon per person. Buy at least one more place setting than you usually need, so a few pieces in the dishwasher never leave you short.

Pick a finish. Stainless steel, like the Tsuyu set, is the most versatile and goes with any dinnerware. Matte black, as in Kage, looks striking against pale stoneware. Gold adds warmth to dark or speckled plates.

Natural handles. Bamboo handle cutlery such as Chikurin echoes wooden boards and trays and suits a relaxed, natural table.

Weight and feel. Hold your current cutlery and notice what you like: a heavier fork feels solid, a lighter one suits everyday meals. Slim, simple handles are easy to hold and easy to clean.

Care. Hand wash bamboo handles and coloured or gold finishes to keep them looking their best. Dry stainless steel promptly to avoid water spots.
