Tea Sets: guide and FAQs

How to choose a tea set

Know how you brew. For Japanese green tea, a small side grip teapot like the Ume teapot and tray set lets you pour quickly so the leaves do not over-steep. For oolong and pu-erh, a gongfu tea set with a small pot, fair cup and tiny cups suits many short infusions.

Material. A ceramic tea set holds heat well and feels grounded on the table. Glass lets you watch the leaves open and the colour deepen. Cast iron, as in the Kurogane set, keeps tea warm for longer.

Size. Small teapots of a few cups are best for one or two people and for repeated short brews. Larger pots suit herbal tea and sharing with guests.

Tea on the move. Travel sets such as Tabiji pack a pot and cups into a compact case for the office, trips or the garden.

Care. Rinse teaware with hot water and let it air dry; avoid soap in unglazed pots, as clay can absorb flavours. Dry cast iron thoroughly after each use to prevent rust.

What is the difference between a Japanese tea set and a gongfu tea set?

A Japanese tea set usually centres on a side grip or handled teapot for green tea, brewed in one or two longer pours. A gongfu tea set uses a small pot, a fair cup and tiny cups for many short infusions, most often of oolong or pu-erh.

What is a fair cup used for?

A fair cup, or pitcher, collects the whole infusion from the teapot before serving. Everyone then gets tea of the same strength, and the leaves stop steeping once the pot is empty.

Is a glass or ceramic tea set better?

Both work well. Ceramic holds heat and feels traditional, while glass shows the colour of the tea and the leaves unfolding. Many people use glass for green and flower teas and ceramic for darker teas.

Can I use a Japanese teapot for loose leaf tea?

Yes, that is what it is designed for. Add the leaves directly to the pot and pour through the built-in strainer or a separate filter, depending on the teapot.
